This has to be my favourite bar, the choc fudge protein bar. It is packed full of protein and the great thing about it is you can eat it and feel great and guilt free.

Base ingredients

Choc Fudge Protein BarDates 1 1/2 cup
Coconut 1 cup
Almonds 1/2 cup
Almond Flour 1 cup
Cacao Powder 3 tbsp
Sacha Inchi Protein Powder 3 tbsp
Maqui Berry Powder 1 tbsp
Ginger Powder 2 tsp
Cinnamon Powder 2 tsp
Chia Seeds 2 tbsp
Coconut Oil 6 tbsp
Lucuma Powder 3 tbsp

Icing ingredients

Cashews 1 cup
Coconut Oil 1/4 cup
Cacao Butter 1/4 cup
Cacao Powder 2 tbsp
Vanilla Paste 1/2 tsp
Maple Syrup 1/4 cup
Dates 1/4 cup

Base Instructions

1. Soak dates in hot water and leave for 15 minutes.
2. Pulse almonds in food processor, then add to a bowl with other dry ingredients.
3. Blitz dates in blender or food processor, save date water. Add coconut and coconut oil and blend, add to dry ingredients.
4. Mix with spoon or hands, adding dates water if necessary. You want to be able to form a ball with the mixture.
5. Put the Ball into a lined baking dish and press down mixture to cover the bottom of the pan. You want to form a lovely solid base. Put in fridge while you make the icing.

Icing Instructions

1. Put dates in bowl and only just cover then in hot water. Soak for 15 minutes.
2. Blitz dates and water to form a paste.
3. Add cashews, melted coconut oil and melted butter to blender, and blend until smooth.
4. Add the rest of the ingredients and blend.
5. Pour icing into base, and use a spatula to spread it evenly over the base.
6. Freeze a least 20 minutes before cutting.
