This recipe for homemade chocolates is easy, healthy and looks spectacular… well for an amateur chocolate maker, I couldn’t believe my eyes as I watched them come out of their molds.
Ingredients for the chocolate
½ cup Superfoodies cacao powder
30 g Superfoodies cacao butter
2 tsp coconut nectar (you could use brown rice malt syrup or maple syrup)
3 TBS extra virgin coconut oil
Ingredients for the chocolate centre
3 TBS coconut butter *see below how to make your own
1 drop peppermint culinary grade essential oil
½ tsp coconut nectar
2 TBS extra virgin coconut oil
Chocolate Instructions
Place the coconut oil and cacao butter in a bowl to melt. Place this bowl in a bigger dish of boiling water to melt, or if you prefer melt over a saucepan of boiling water. Once melted take the bowl out of the water and add the cacao powder and coconut nectar. Pour into a jug. Arrange 12 mini silicon cups on a tray and fill each case with chocolate (enough to fill the base of the cup). Place the tray in the fridge or freezer to set (takes about 10 minutes). In the meantime return the remaining chocolate mixture back to the hot water dish to keep it liquefied.
Centre Instructions
Place all centre ingredients in a bowl and melt over hot water just enough to combine ingredients and have a firm manageable mixture. Divide into 12 equal amounts or measure a teaspoon full and mold into a flattened ball. Take chocolate base out of the fridge and place the filling in each cup. Return to fridge or freezer to set. When nicely firm take out of freezer and pour the remaining chocolate into each case. Remember to leave enough space around the peppermint centre for the chocolate to run down the sides.
*To make your own coconut butter: take 1 cup shredded or desiccated coconut and some melted extra virgin coconut oil plus a pinch of salt. In a blender place the coconut and blitz on high speed until it becomes a butter consistency, add the salt and some coconut oil to adjust the texture as you go. You are aiming to make a buttery paste. If you all of a sudden think it is too runny remember it thickens as soon as you rest it.
