This Orange Chocolate Fudge Recipe is from the Amazon Best Seller: ‘21 Best Cacao Recipes‘ – By Donna Davidson and Kay Wood
Base Ingredients – for Orange Chocolate Fudge
¼ cup organic raw cacao powder
1 cup walnuts
½ cup coconut
¼ cup organic cacao nibs / or organic sweetened cacao nibs
½ cup dried dates – soaked in hot water for approx. 15mins
1 tablespoon tahini
1 tablespoon organic lucuma powder / or organic yacon powder
Topping Ingredients – for Orange Chocolate Fudge
100g organic cacao butter
2 oranges (rind and juice)
2½ cups raw cashew nuts
½ cup organic maple syrup / or organic yacon syrup
¾ cup organic raw cacao powder
Base Method
1. Blitz walnuts in blender until they are a rough powder and put aside until needed.
2. Soak the dates (12 dates is about ½ cup) in boiling water for 15 mins. Make a date paste by blending the dates in the blender and adding the date water until you get a nice sticky smooth paste.
3. Add all base ingredients to the blender and blitz until well mixed. Remove from blender and mix by hand if needed. Press into a 26cm x 19cm dish lined with baking paper.
4. Place in refrigerator or freezer for ½ an hour – or while you are making the filling.
Topping Method
1. Blitz cashew nuts into a fine powder.
2. Melt cacao butter (Note: Cacao butter is easy to burn if you melt it in a pot on the stove. I always stand it in a dish sitting in a larger dish of boiling water for 15mins).
3. Place all topping ingredients in blender, with cashew nut powder, and mix together until smooth.
4. Remove base from refrigerator and spread the fudge mixture on top.
5. Return to refrigerator to set. Setting takes about 30 to 60 mins.
* Notes:
Your Orange Chocolate Fudge will be easier to cut up later if you remember to ‘score’ it just before it fully sets. It will keep in the refrigerator for up to 2 weeks. You can also freeze it if you wish to keep it longer.
