This is a great recipe to have on hand for an energising treat. These tart cherry cacao truffles can also be served as a desert or enjoyed as a snack during the day. They are packed with berry-goodness and are so easy to put together. You can play with this recipe as well if you have other nuts or dried fruit on hand. Here we have have found the flavours of the tart cherries with goji berries combine so deliciously with cacao.
Makes 16 Truffles
Tart Cherry Cacao Truffles Ingredients
1 cup Organic Apple Sweetened Tart Cherries
½ cup Organic Goji Berries
¼ cup Organic Whole Pitted Dates
½ cup walnuts, chopped
½ cup Organic Almond Meal
1 tsp. vanilla essence
¼ tsp. cinnamon powder
¼ cup Organic Chocolate Kibbles
2 tbsp. Organic Cacao Powder
2 tbsp. Organic Lucuma Powder
Method
Combine all ingredients except for the Chocolate Kibbles, Cacao Powder and Lucuma Powder in a food processor and process until dense dough has formed. Add the Chocolate Kibbles and pulse a couple of times to combine, leaving in some textural crunch. Check the consistency of the dough – it should hold together when pressed. If too crumbly add a tsp of water at a time until the mixture holds firmly when pressed.
Mix the Cacao Powder and Lucuma Powder together in a bowl. With your hands, form a ball with one heaped teaspoon of the dough at a time and roll in the cacao-lucuma powder to coat the truffles. Eat immediately or store in the fridge for up to 3 weeks.
Optional: Roll truffles in more of the Chocolate Kibbles for extra crunch
