We have searched the globe for the best quality organic coconut milk powder we could find. Made from the milk extracted from mature coconut meat, and gently dried to form this intensely flavoured coconut milk powder, which can easily be reconstituted for coconut milk by mixing with water.
Coconuts contain significant amount of saturated fat which mainly consists of MCFAs (medium-chain fatty acids), in particular lauric acid (~42%). Lauric acid is free of cholesterol and has antiviral and antibacterial properties, hence coconut milk could play a role in protecting the body from infections and viruses. The other medium-chain fatty acids primarily found in coconut milk are caprylic acid (~7%), which is rapidly metabolised for quick energy, and capric acid (~5%) which is efficiently converted to ketones.
MCFAs have come into the limelight due to the unique way in which we digest these fats, bypassing the normal fat digestion process, being absorbed directly into the portal circulation and transported directly to the liver for energy conversions, with out the need for bile salts or pancreatic enzymes usually needed in the digestion of fats. As a result, MCFAs are metobalised faster, leading to the potential for more rapid energy availability, and is believed to support ketone production in the liver.
